Vegi lasagna

In a large saucepan...
2 T olive oil
1 T minced garlic
1 small chopped yellow squash
1 small chopped zuccini
3 stalks chopped celery
1 small chopped onion
1 chopped green pepper

Cook until softening, add 1 can chopped tomatos, 1 sm can tomato sauce, 1 can tomato paste
Simmer and add 1 t garam marsala, 1 t. salt, 1 t, ginger

Cook following package directions 1 box whole wheat lasagna noodles.

In mixing bowl mix with spoon
1 carton ricotta cheese
1 lb mozerella cheese
1/2 c parmasean cheese
2 eggs
2 T parsley
1/2 t pepper
1 t salt

Layer (I used 1 small baking pan and 1 med foil pan)
thin veg sauce, noodles, cheese, sauce, noodles, cheese, thin sauce

Bake 375 for 30 min.....total time to make about an hour.
