Eggs for dinner

Sautee vegitables....I used 1 zuccini, 1 yellow squash, 1 celery stalk...in 3 T coconut oil. Season with season salt. (or whatever). Add 1 sm can drained sliced black olives.

In separate bowl beat together 4 eggs and 1/2 cup flour (I used garbanzo/fava flour).

When all liquid has evaporated from vegatables and they are as cooked as you like, pour vegitables with oil  into 9x9 baking pan. Mix in egg mixture.

Bake 450 for about 15 min. Remove from oven. Top with cherry tomato slices. Broil until tomatos start to cook, but eggs don't get over done. About 5 min. Top that with mozzerella cheese. Broil until cheese melts. A couple minutes.
